>Easy as Pie Banana bread

>I got this recipe from FireMom. She got it from somewhere else, one of her friends. It wasn’t posted on Stop, Drop and Blog so I think it came from a tweet FireMom sent awhile back. Sorry I don’t remember exactly when.

It is a super simple very easy Banana bread to make. What makes it special, at least to me, is the adding of Chocolate Chips! Brilliant I say! Absolutely Brilliant! I made a loaf for the WINGS brunch at church yesterday and it went over well.

Here is the recipe:  Easy as Pie Banana Bread (makes 1 loaf)

3 very ripe bananas
2 tablespoons soft butter
1 cup sugar (I used 1 cup Splenda)
1 1/2 cups flour
1 teaspoon baking soda

1 cup white chocolate chips (can use semi-sweet instead)

  1.  Preheat oven to 375 degrees F / 190 degrees C
  2. Mash bananas in a bowl and add the rest of the ingredients. Stir until just blended. It seems as if there isn’t  enough liquid but don’t be fooled. The very ripe bananas add all the moisture needed. Mixing the ingredients together with a fork for 2-3minutes is you need to create the batter.
  3. Pour into a greased 9″x5″ loaf pan. Bake for 45 minutes or until toothpick comes out dry.
  4. Cool for 10 minutes on a cake rack before removing from pan.
  5. To bake muffins, prepare the batter as above and bake for 20-25 minutes at 400 degrees F / 200 degrees C in center of oven.
Ruth’s tips and variations:  chopped walnuts or pecans, dried cranberries or cherries
Just make sure all additional ingredients add up to 1 cup. For example, I used 1/2 C milk chocolate chips and 1/2 C chopped pecans/walnuts. Otherwise you will lose the bread/cake texture.
I ate a piece this morning and it is still very moist and yummy, even after being in the fridge all night
